Ganache
Ingredients
- 250g cold milk
- 8g Agar+
- 300g dark chocolate
- 100g Palatinose
- 400g cream 35%
Preparation
- Heat milk and Agar+ to 80°C.
- Add dark chocolate and Palatinose and mix 1:30 min at room temperature.
- Add cream and mix 1:20 min at room temperature.
