Ingredients

Hazelnut cremeux

Ingredients

  • Caramel (65 g sugar + 80 g cream 35%) 
  • 75 g Hazelnut Paste - Food Revolution by Didess
  • 3 g salt
  • 2 g Gelatin Powder

Preparation

  1. Heat the cream.
  2. Caramelise the sugar and deglaze with the warmed cream.
  3. Add salt and Gelatin Powder to the Hazelnut Paste.
  4. Add this mixture to the caramel and leave to cool.
  5. Mix everything together.

passion fruit and vodka coulis

Ingredients

  • 200 g passion fruit puree
  • 40 g Vodka Vanille 
  • 20 g sugar
  • 6 g Emulbinder

Preparation

  1. Mix vodka, sugar and passion fruit together.
  2. Heat to 37°C.
  3. Add Emulbinder and blend to a nice coulis.
  4. Put it all into a piping bag.
