- Crémeux Hazelnut
- Crumble Brazil Coffee - Frozen Elements by Didess
- Cocktail-Foam Pornstar Martini - Food Revolution by Didess
- Passion fruit and vodka coulis
- Crunchy Nuts Hazelnut - Food Revolution by Didess
Hazelnut cremeux
Ingredients
- Caramel (65 g sugar + 80 g cream 35%)
- 75 g Hazelnut Paste - Food Revolution by Didess
- 3 g salt
- 2 g Gelatin Powder
Preparation
- Heat the cream.
- Caramelise the sugar and deglaze with the warmed cream.
- Add salt and Gelatin Powder to the Hazelnut Paste.
- Add this mixture to the caramel and leave to cool.
- Mix everything together.
passion fruit and vodka coulis
Ingredients
- 200 g passion fruit puree
- 40 g Vodka Vanille
- 20 g sugar
- 6 g Emulbinder
Preparation
- Mix vodka, sugar and passion fruit together.
- Heat to 37°C.
- Add Emulbinder and blend to a nice coulis.
- Put it all into a piping bag.
